25 August 2021, Hong Kong SAR, China – The Murray, Hong Kong, a Niccolo Hotel is pleased to announce the appointment of Edgard Sanuy Barahona as Executive Chef. Sanuy is responsible for planning and directing the culinary operations across five restaurants, bars and event spaces.
Born in Lleida in the west of Catalonia, Sanuy grew up spending time in the restaurant kitchen of his chef-owner Grandmother. After graduating with a marketing degree, Sanuy had a one-year apprenticeship at his uncle’s restaurants in Tokyo and realised his true passion was in cooking. He then returned to Spain for official French culinary training in Escuela de Hostelería Hofmann and embarked on his culinary journey in the one Michelin-starred Hofmann Restaurant. Sanuy continued to hone his craft in Michelin-starred restaurants, Torreó de l'Indià and Rincón de Diego, in Spain.
2012 was a special year in his career as Sanuy was appointed as Executive Chef to open an individual Spanish restaurant, BCN, in Hong Kong. In merely one year’s time, Sanuy was awarded Chef of the Year by Foodie Forks 2013. He then joined Maximal Concepts as the Group Corporate Chef in 2013, opening and overseeing seven award-winning restaurants including Mott 32, Stockton, Mercedes me and more. Managing chefs from different cuisine backgrounds was a challenge but Sanuy found that their passion in cooking created a common ground to work through the language and culture barrier.
Taking a brief break from Hong Kong, Sanuy moved to Manila for one year, and took up the position of Group Corporate Chef at La Lola Group. Returning later to Hong Kong as Culinary Director of Epicurean Management marked another turning point in his career. In his four-year tenure, Sanuy was responsible for exploring and developing many high quality dining concepts such as Pica Pica, Rubia and more.
Sanuy sees every project as a milestone in his career. From rolling up his sleeves to create menus and manage the kitchen, to overseeing projects and implementing systems at a group level, Sanuy never stops pushing his boundaries and exploring new potential.
While applying French techniques on authentic Spanish recipes is the backbone of Sanuy’s culinary style, his approach to ingredients, to look for the right ingredients from the right places, is deeply influenced by his grandmother. One key self-reflection that he gained from his managerial roles is that, “you are as good as your team is”. To build a team with the same vision and passion around him, Sanuy fosters a caring and supportive environment at work where everyone can excel.
With his recent appointment at The Murray, Sanuy looks to cater to the market needs while staying true to authenticity of flavours, and respecting the restaurants’ identities and flair.
